Cloud 23, at Hilton Manchester Deansgate, has revealed its delicious new Spring Summer cocktail menu. Served on the 23rd floor of the iconic Beetham Tower, guests will have the chance to try five new signature cocktails, created by Head Bartender, Matthew Soares.

Using Manchester’s heritage as his muse, Matthew draws influence from the Ancient Romans invading Castlefield to Thomas Marsland, Europe’s largest hat producer, based in Stockport in the 1970s. The end result is a unique menu of cocktails that offers something completely bespoke to Cloud 23, and its guests.

New cocktails include, XXIII, a zesty mix of Grappa, Aperol, Vermouth, grapefruit cordial, topped with a lemon and basil foam. The Last Straw (Hat), a tasty and fun cocktail with a base of pomegranate and rose, mixed with lemon, Creole and Bianco Vermouth, plus a kick of Irish Whiskey.

Next up is Airmail, a mix of Ron Zacapa 23, orange blossom honey, citrus and Champagne. There’s also a twist on an old classic, Cloud Spring Punch, a combination of Ketel One Vodka. Champagne, cassis and citrus flavours. Finally, Summit, a zingy concoction of fresh ginger and lemon combined with the finest cognac.

Matthew Sores, Head Bartender at Cloud 23, says: “We’re incredibly excited about the new Spring Summer 2014 menu.  My team and I always look to our surroundings for inspiration and what better place than Manchester to produce this unique menu.

“Creating the cocktails is a lengthy process; we spend months making sure each one is just right for Cloud 23 and our guests. We look at everything from flavour combinations, unique garnishes to glassware and supporting props. There is even a disclaimer that you must wear a hat whilst drinking playful cocktail, The Last Straw (Hat).  After all, who doesn’t enjoy wearing a hat!

Cloud 23 is open Monday and Thursday from 11am to 1am, Friday and Saturday from 11am to 2am and on Sunday 11am to 1am.
