An ever-evolving menu is promised by incoming culinary star, Stuart Duff
Affirming its place at the pinnacle of the Northern gastronomic scene, Hilton Manchester Deansgate is pleased to announce the appointment of its new executive head chef, Stuart Duff. The accredited new chef has committed to a no-nonsense, back to basics and tasty future for diners.
Stuart brings 16 years of executive chef and a further ten years of culinary experience to the appointment and comes to Hilton Manchester Deansgate from Macdonald Hotels where he was regional development executive chef. During his career he has worked across the north of England in a selection of leading hotels including the Crowne Plaza in Liverpool, De Vere Hotels and Macdonald Hotel and Spa in Manchester. A local boy through and through, Stuart grew up in Manchester and went on to learn his craft at Halton College in Widnes. He has also spent time working under the leadership of culinary master Albert Roux, during a placement in Amsterdam.
Stuart’s background as a development chef will be crucial to his new role as he grows and evolves the menus across the business not just on a seasonal basis, but, ambitiously every few days. With the great legacy of David Gale’s commitment to British produce at the venue in diners’ memories, Stuart is also keen to have close control on the produce used in his kitchens. Stuart is very clear that it is the quality of produce that is his absolute priority and what he will work closely with all suppliers to maintain taste and flavour for diners.
Stuart believes his food philosophy is a pretty simple one:
“I am committed to using only the best produce, chosen in season and from the best producers to ensure I can give diners the very best of flavours. Good produce, cooked well, with uncomplicated presentation is my plan and I can’t wait to get started. I have plans to make sure it’s the best I can create every day which will entail redeveloping menus not just in my first few weeks, but on a daily basis, ongoing. As the seasons change, so will the menus across the hotel.”

Stuart has exciting plans for all aspects of our menus across the wide breadth of Hilton Manchester Deansgate’s offering and I’m delighted to welcome him to the helm of our wonderful kitchen. His outlook is all encompassing, and completely focused on flavour, so I’m anticipating delicious new additions across the board from the Podium restaurant, to our banqueting offer, to Cloud 23’s bar snacks, right through to our all-important room service where I know he has some really exciting plans to exceed our guests’ preconceptions of the service. We are hoping every diner will be delighted.”
